Sacred Chocolate
Ingredients
Can be made using
cocoa powder (see left column)
or grated cocoa (see right column)

Sunroot syrup

Also called Jerusalem artichoke, earth apple, or topinambur
May be substituted with other sugar-free natural syrups

Step-by-step Instructions

Grate cocoa butter into a bowl

Add cocoa powder (using a small sieve) or grated cocoa beans

Do not mix just yet

Place on a bain-marie (also called double boiler or water bath)

Make sure the top bowl's bottom doesn't touch the water below

It's crucial to wipe all bowls dry before pouring to avoid any water or even steam getting into our chocolate

Prewarm your sunroot syrup by placing the bowl into warm water

When cocoa butter starts to melt and forms a small puddle, begin stirring with a silicone spatula until fully incorporated

Keep stirring continuously until the temperature reaches 42 °C

Add warm sunroot syrup and mix well using a whisk

The temperature of the mixture has now dropped slightly, so bring it back to 42 °C

Now we need to temper our chocolate. Meaning slowly cool it down to 31 °C while stirring constantly

Make sure you stir clockwise and without stopping

Continue stirring for about 15 minutes until the temperature reaches 31 °C

Now our chocolate is ready to be used for coating

If you want to make chocolate bars, pour the mix into moulds

Decorate with nuts, dried fruits, seeds...

Leave in the fridge until completely hard
