Pineapple Jelly Filling
Ingredients
Pineapple chunks
300 gr
Ripe and juicy. Fresh or frozen will do
vanilla stevia liquid
5–7 drops
Vanilla pods or alcohol-free vanilla extract also works
Chia seeds
3–5 tbsp
May be substituted with psyllium
lemon juice
to taste
Step-by-step Instructions

Peel your pineapple, remove core, cut into cubes

Blend in a food processor using an S-shaped blade

Add vanilla and lemon juice

Make sure to taste. Should be slightly sour

Mix in chia seeds (or psyllium)

Leave in the fridge for 30 minutes

Give it a good stir. If it feels not thick enough, add some more chia and leave for another half an hour

Fill your mould (silicone ice tray) with the jelly

Put it in the freezer for several hours or overnight

All done!
