Currant Confiture Filling
Ingredients
Black Currant
300 gr
Fresh or frozen
vanilla stevia liquid
5–7 drops
Vanilla pods or alcohol-free vanilla extract also works
Chia seeds
3–5 tbsp
May be substituted with psyllium
Sunroot syrup
to taste
May be substituted with other sugar-free natural syrups
Step-by-step Instructions

Blend currants in a food processor (if frozen, let it thaw first)

Add vanilla and syrup. Taste all the time

Keep tasting. Should be only slightly sour

Mix in chia seeds (or psyllium)

Leave in the fridge for 30 minutes

Fill your mould (silicone ice tray) with the confiture
7
Put it in the freezer for several hours or overnight

Done!
